blackberry sorbet




Today I'm sharing an amazingly awesome tasting and easy recipe that I found on Pinterest. It's literally so easy anyone can make it and it's also a delicious way to beat the heat this Summer. There are only four ingredients that you'll need. 

  •  3 cups of frozen berries (we used blackberries this time)
  • 1/2 cup sugar
  • 2/3 cup of cream
  • 1 teaspoon vanilla


All you'll need is a blender or a food processor for the job. Throw in your sugar, vanilla, blackberries (or whatever fruit you'd like to use) and then add your creme. 



Our blackberries were home grown in our backyard, picked and then frozen. The berries being frozen didn't mess up the recipe but it did take longer to blend. You could use fresh fruit or bagged frozen fruit if you're in a pinch.



We also ended up using Sweetened Condensed Milk because it was the only creme we could find but it worked and tasted amazing!



The fun part is watching it all come together....



We used these shallow plastic containers that were from Ikea. They were pretty much perfect for freezing the sorbet in.


We also made Strawberry, Blueberry and Pineapple sorbet too! You can use any fruit you'd like and it's so simple! Our favorite flavors were the Blackberry and Blueberry.

All Hail to the Kale

Hey guys! I'm crazy for Kale chips! They are so yummy and super easy to make. The first time I made them... the Mister ate them all by himself. I brought some into Mandy the next day at work and she nibbled on them too. They are the healthy alternative to potato chips. Check it out.....



All you have to do is just grab some regular Kale (don't get the pre cut baggie kind). Make sure you wash them and pat them dry. Pre heat your oven to 350. Place your Kale on a baking sheet and drizzle with olive oil and either sea salt or Kosher salt (don't use regular table salt because it's too salty). I like to add sesame seeds as well. You can get them in the Asian Isle at HEB or at any Asian Market. Bake for about 10-15 minutes or until crispy. Serve and eat immediately. These guys don't save well, they will get all soggy on you.
So give it a try next time you feel like having something salty like fries or chips, this can be your
healthy alternative.

Seseame cucumber rice balls



  2 cups sushi rice (this is not hard to find.. it was in the rice aisle at my local market
3 cups water
1/2 teaspoon sea salt (or just plain ole salt if that's what you got)
1/4 cup sesame seeds (black/white mix)
1/4 cup minced green onions
1 cucumber chopped
2 tablespoons soy sauce
Bring rice and water to a boil over medium-high heat. Lower to where the water is just simmering on low- medium and cook until water has been absorbed and the rice is cooked thoroughly.  Be careful not to over cook. Remove from heat, fluff with a fork and let cool.

Add cooked rice, salt, sesame seeds, onions, cucumber and soy sauce to a bowl mixing together to incorporate all ingredients.

Now let's shape them...
I let my rice get cool before I mixed and shaped into balls



To form rice balls, line a small cup with plastic wrap sprinkling with water to keep the rice from sticking.
You should also put a little water on your hands because the rice will be very sticky.
Fill the cup about 1/2 full with rice, gather the plastic wrap forming a ball shape then remove from plastic wrap and set aside on a parchment paper lined dish or plate. Repeat this with remaining rice.
I ended up only making enough rice balls for my daughter to take to for lunch and then we ate the rest of the rice straight out of the bowl. That's how good it was..

Very clean and fresh tasting... without the spicy tuna...

summer pina colada recipe

Matt and I have been drinking a lot of Pina Coladas recently. Matt has perfected the recipe.... these are seriously the best Coladas I've ever had. Check out this simple and delicious recipe.

3 oz light rum (use the coconut flavored)
3 tbsp coconut cream
3 tbsp crushed pineapples
2 cups crushed ice

Put ingredients into blender. Blend at a high speed for short period of time. Serve with a straw.

This makes 2 drinks, double the recipe if needed.

Thai Watermelon Salad



(recipe Jamie Oliver’s Family Dinners)

1/4 of a watermelon
2 handfuls of fresh cilantro leaves
2 handfuls of arugula
2 handfuls of fresh mint leaves
1 small bunch of radishes, finely sliced
a handful of peanuts or sunflower seeds (i used sunflower)
4oz feta cheese

Dressing:
a thumb-sized piece of fresh ginger, peeled and grated
1 red, 1 yellow and 1 green chilli, deseeded and finely sliced
1 tablespoons soy sauce
6 tablespoons olive oil
1 teaspoon sesame oil
juice of 3 or 4 limes
sea salt and freshly ground black pepper

Remove the skin from the watermelon and cut the flesh into small cubes, removing as many seeds as you can.
When you pick the cilantro leaves, remove the stringier part of the stalks but keep the finer ones, as they are nice to eat. Place in a bowl with the rocket, mint, watermelon and radishes. Put the ginger, chilli, soy sauce, olive oil and sesame oil into a smaller bowl and add just enough lime juice to cut through the oil–the number of limes you use will depend on how juicy they are. Season to taste and make sure the dressing is well balanced.
Place your peanuts or sunflower seeds in the oven or in a pan and warm through, then roughly pound them up in a pestle and mortar or in a metal bowl using the end of a rolling pin. Dress the salad really quickly. (You can use more dressing if you wish, but any left over is great to keep in the fridge to use the next day). Divide between the plates, sprinkle over the hot peanuts or sunflower seeds and crumble the feta cheese over the top.

Pupsicles

 I recently came across this dog treat recipe in Modern Dog Magazine. Lucy gets overheated easily in the sun so I wanted to give her a treat that is nutritious and that would also cool her down. Pupsicles! Here are some recipes that I found and wanted to share with you. It's fast and easy and Lucy just loves her cold treats.

Poochie Pupsicles



BASIC RECIPE
1 ripe banana
4 cups orange juice
1/2 cup plain yogurt
Puree all ingredients in a blender—or simply mash the banana by hand and combine with the juice and yogourt—then pour into a popsicle mold, freeze, and serve to your favourite hot dogs.
VARIATIONS
Switch up your fruit. Try subbing in:
Blueberries
Strawberries
Peach
Watermelon
Or mix in some peanut butter.
You can also vary the juice you use. Try pineapple juice or apple juice; just check to be sure the juice you use is all-natural and has no added sugar.
Modern Dog pup-approved combinations include:
* watermelon, strawberry, pinapple juice, and yogurt
* peanut butter, banana, apple juice, and yogurt


Savoury Pupsicles 

Homemade (no salt) chicken-broth pops

Had barbequed chicken for dinner? Don’t chuck the carcass! Throw it in a large pot, cover with water, and let it simmer for an hour and a half. Cool, then pick the meat off, discarding the bone but keeping the cartilage, meat, and broth. Left over cooked carrots and/or peas? Mash them up and mix them in! Pour the chicken broth into your popsicle mold (save whatever’s leftover as a tasty addition to your dog’s next few meals) and freeze. Best served outside.





Feeling lazy?

Simply cube some Watermelon, chuck it in a Ziplock baggie, and toss it in to the freezer for a natural, on-the-go “freezie” you and your dog can share.
Tip
Don’t have a popsicle mold? Freeze in small Tupperware or empty single-serving yogurt containers. Run the container under warm water to release the frozen pupsicle.

* Editor's note: there is a story making the rounds that ice can cause bloat in dogs. While extreme cold, such as drinking a bucket of ice water, might cause the stomach to spasm, it's unlikely to cause either bloat (the stomach fills up with gas) or torsion (the stomach flips over and twists the entrance and exit-a life threatening problem). At any rate, we suggest that people only give their dogs one pupsicle at a time; they're intended to be a treat, not eaten 12 in a go anyways. :)

I tried my pupsicles with Peanut Butter and Pineapple juice instead. This is what Lucy thought.
